1. Chickpeas

Chickpeas work in curries, salads, soups, wraps, roasted snacks and spreads. Their mild flavor means they take on spices and sauces well, while their texture gives a meal more substance. Canned chickpeas are especially useful for busy days because they require little preparation.

2. Tofu

Tofu can be crisped, baked, scrambled, marinated or added to soups. The key is to think of it as a flavor carrier rather than a finished food. A bold sauce, good seasoning and the right cooking method make a much bigger difference than the brand name on the package.

3. A good nut or seed

Peanuts, cashews, walnuts, sesame seeds and sunflower seeds can add richness and texture. They can become toppings, sauces, spreads or crunchy additions. Keeping one or two favorites on hand is enough; there is no need to buy every variety at once.

4. Frozen vegetables

Frozen vegetables make plant-based meals more realistic on nights when chopping a counter full of produce is not appealing. Broccoli, peppers, spinach, peas and mixed stir-fry vegetables can move from freezer to pan quickly and reduce food waste.

5. One sauce you love

A reliable sauce is often the difference between an ingredient list and a meal. Soy-ginger sauce, curry sauce, tahini dressing, tomato sauce or a creamy plant-based sauce can give familiar ingredients a completely different direction. Start with one you genuinely enjoy and build from there.

In Part 3, we will use these pantry basics to build a flexible meal formula that works for vegans, vegetarians and mixed households without cooking three separate dinners.
