Indian-Style Healing Lentil Soup

This warming, nourishing soup is inspired by traditional Indian dal. It’s simple to make, deeply comforting, and packed with healing spices that support digestion and reduce inflammation.

Ingredients

  • 1 cup red lentils, rinsed
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tbsp fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 carrot, diced
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • Salt and black pepper to taste
  • Fresh cilantro for garnish
  • Lime wedges (optional)

Instructions

1. In a large pot, heat a small amount of oil or water. Add cumin seeds and let them sizzle for 30 seconds.

2. Add ginger and garlic, sauté for 1 minute until fragrant.

3. Add carrot and celery, cook for 3-4 minutes.

4. Stir in turmeric, then add lentils and broth.

5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are soft.

6. Season with salt and pepper. Garnish with fresh cilantro and a squeeze of lime.
